Lemon Icing:

  • 2 cups (220 g) powdered sugar
  • 1 tablespoon milk
  • 2 tablespoons fresh lemon juice

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch (22 x 12 cm) loaf pan with nonstick spray and line with parchment paper.
  2. In a large bowl, cream the butter and sugar with an electric hand mixer until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, beating to incorporate after each addition and scraping down the sides of the bowl as needed.
  4. In a medium bowl, whisk together the sour cream, lemon juice, lemon zest, and vanilla until smooth.
  5. In a separate medium bowl, whisk together the flour, baking powder, and salt.
